Please somebody help me understand what is supposed to mean here. I don't really get what this "griefing to death" stands for.

It's from a game script.
There are some guys who want to kill a monster. That's why one of them offers to build a special machine to help them kill it. That's all I can say about the context...

So am I right in understanding that the whole sentence means something like "Instead of annoying the monster endlessly"?

rather than continually/endlessly causing grief/distress or sabotaging

"griefing" is usually causing grief to other players online or sabotaging them so not at all sure it's the "monster" here

if "to death" does mean "killing the monster" then "griefing" could mean causing it grief by repeatedly harassing it.

Yes, I believe "repeatedly" is the key point here. Instead of pissing the monster off on and on and on... until it probably dies. :)
