This is an item in a table under the subheading "MATERIEL DE CUISINE". A Google image search for this term shows refrigerated units of various sizes. At first, I thought it might be "cold room", but it appears to be smaller than that (i.e. not one that you could walk into). Also, a further subheading is "CHAMBRES FROIDES", so I presume that's the "cold room". It doesn't say "cellule de refroidissement RAPIDE", so I don't think it's a freezer...

Other items in that section are "Friteuse", "Combisteamer", "Sauteuses", "Marmites" and "Fourneaux".

"Cooling cell" doesn't seem right. "Cooling unit", maybe (although that makes me think of air-conditioning equipment)? Is it just a fancy name for a big fridge?! As I don't have any further context, I think I need a term that's quite general/vague! Any suggestions?

I think this is what you are looking for. Something to cool hot food/drink quickly, rather than somewhere to store them once cold

neutral Joanne Nebbia : chiller yes, blast no ... without the "rapide" in the original text it is just as likely to be a chiller unit that simply keeps food at low temperatures

agree Tony M : Quite right; this is not "just a chiller unit that simply keeps food at low temperatures", it is a quite specific appliance for cooling food rapidly, even as far as freezing. / Yes, I've always dreamt of a "microwave that sucks", now I have one!

Thanks. Well, you're the expert in this area! This is something my own kitchen needs. Down in the Midi you need to cool food quickly but putting warm things in the fridge means you get warm beer.

I think compartment sounds better than unit or cell.

I also found "cooler" for chambre froide in le Grand dictionnaire du Québec. So various words or phrases to choose from...

disagree Tony M : Although that could apply to a refrigerator or ice-box, I'm afraid this general term would not be correct for this very specific professional appliance.

This is identified as a fast-cooling device, but in practice, most of them are pretty fast, that's the whole point of them!

In professional kitchens, it is forbidden to simply freeze food by bunging it in the deep-freeze, the only method allowed is to use one of these things.
