IMO, "self-check" sounds too much like 1/ the workers are checking themselves (viz., their bodies, the clothes they are wearing) rather than the work, or 2/ machines that perform diagnostic tests.

: Self-check is a standard term and couldn't be misunderstood, in the way you suggest, by anybody in the workplace. Checking each other's work would be "se contrôlent mutuellement".

I just think this sounds better, fitted into the overall sentence.
There are plenty of examples on Google — a lot from software contexts, of course, but plenty from QA and similar contexts too.
Although this particular one is from a foreign site, I thought it was sufficiently close to your context to be interesting:

auto... definitely does suggest "their own work", otherwise I feel sure the idea of inter-worker checking would be expressed differently in FR.

I think in the context of the document as a whole, it would not be perversely misread; after all, I didn't suggest "Check themselves", which would indeed lend itself to the interpretation you suggest!
